A Stereo Pair refers to two units being usable in a stereo setting without any chance of changing the stereo image. For microphones it means they have been calibrated to have frequency responses that are nearly identical. For compressors, and other fx units it usually means they can be "linked" in a situation where one set of controls is copied exactly to the other so that they operate in tandem. If you are just using two mono units you can unintentionally have unequal left and right sound the stereo pair guarantees an equal and representative stereo signal.
